[...] Domaine Pech Rome is the property of two pharmacists – Mary from Ireland and Pascal from the Mediterranean coast. A common interest in wine lead us to create the estate in 2001. The cellar was established in a traditional vignerons house, the vineyard comprises 10 ha ( 25 acres), of which 7ha produce AOC Languedoc-Pézenas wines and the reminder in Vins de Pays. In AOC zones, Syrah vines are planted on gravel, shale and gravely clay (1983-1985), Mourvèdre is planted on vitreous basalt terraces (1988), Grenache (1982) and Carignan (1944-1971) are planted on clay limestone dolomites.
[...] Most of our Grenache and Mourvèdre vines are pruned with the «goblet» shape, leaving on each stump between 4 to 6 arms, each bearing 2 vine shoots each year. It’s perfectly adapted to the Mediterranean climate and the Grenache variety. This system requires patience, it’s longer to grow, and its advantages compared to others systems does are to be seen after a few decades. We use is the « cordon of Royat » too, consisting in establishing the stock over the wire, leaving 5 buds with 2 vine shoots each one. This system is particularly interesting for Syrah and Roussanne, which has falling down ports and fragile wood. [...]

One can see stony chalky scree covered land on the slopes of Gigondas, as well as grey clay red marl; in Vacqueyras however, we note slopes of chalky clay, Aptien Cobalt and round stones.
